Recipe: Burst Tomatoes

Ingredients:

  • Cherry or any Grape tomatoes

  • Feta Cheese

  • Garlic (1-2 cloves chopped finely)

  • Oregano (dried or fresh)

  • Parsley Leaves (chopped up finely for garnish)

  • 1/2 Cup of Chicken or Vegetable Stock

  • Salt and Pepper

Steps:

  • Heat Pan medium to high heat. More towards high heat.

  • Drizzle in some oil once pan is hot and toss in the tomatoes. Need the pan to be hot so it starts to char and crack the skin of the tomatoes. Cook for about 5-10 mins

  • Add salt and chopped garlic once skin of tomatoes start to show signs of cracks

  • Once garlic changes color, add 1/2 cup of stock

  • Change to medium heat and let stock simmer for about 2-3 mins

  • Add your dried and/or fresh oregano. As much or as little as you like to your taste

  • Stir everything together and let is cook for 2 mins. Then add Feta Cheese crumbled all over the dish. Again, as much or as little as you like

  • Stir everything together and keep simmering till cheese melts down and sauce starts to thicken

  • Once sauce thickens, sprinkle on chopped parsley leaves to garnish and it’s ready to serve
